Sunday Baking: Skinny Apple, Cinnamon & Walnut Loaf Cake

Following on from last Sunday's baking post, today I wanted to share my take on my Mum's Dorset Apple Cake, as this low sugar option is a little more 'diet friendly' or perfect for those looking to reduce their sugar intake like myself. The great thing about this loaf cake is that it's super easy to make {even a novice like myself can make it!} and if you're a countryside girl like I once was, I know you'll have an abundance of apples that you need to use up at this time of year!





What you'll need: 

100g self raising flour 
1 tablespoon baking powder 
100g 0%fat greek yoghurt 
1 Large cooking apple 
1 tablespoon cinnamon 
2 large eggs 
8 tablespoons of granulated sweetener 

For the topping {optional}: 

A handful of walnut pieces 
1 teaspoon cinnamon 
1 tablespoon plain flour 
1 tablespoon brown sugar 
1 tablespoon unsalted butter


Method: 

1. Preheat the oven to 180 degrees. 
2. Peel and core your cooking apple, before cutting it into small cubes and placing to one side. 
3. In a large mixing bowl, add your flour, cinnamon, granulated sweetener, baking powder, greek yoghurt and eggs. 
4. Whisk all of the ingredients together until you form something that resembles cake batter. 
5. Add in the apple cubes and stir gently. 
6. Grease a standard loaf tin and pour the mixture in. 
7. To make the topping, add your flour, sugar, butter and cinnamon into a bowl and rub together with your fingers until a crumble is formed. 
8. Sprinkle the crumble on top of the mixture and place a few walnut pieces on top too {depending on how much you like walnuts!}
9. Place into the preheated oven for 30 mins, or until golden brown and cooked through. 
10. Remove the cake from the loaf tin and leave to cool. 


This is one of my favourite cake recipes around this time of year as the cinnamon and apple combination is just so autumnal, so I hope you enjoy it! The cake is perfect on its own with a cup of tea, or served with ice cream or warm custard {my personal favourite}, and can be enjoyed hot or cold.
